My advice would be if your on a budget stick with 8 but if you have the money go with 16. Some would even go as far as suggesting you can disable the page file with 16GB of memory but that's a personal choice as I've tried it both ways and noticed I get more performance without it. So sure you can get away with 8GB for most situation but if you want to increase performance in gaming you need to use the page file as little as possible. I have 16GB of memory and was recently tracking my memory usage while playing Evolve was at 6.1GB of ram so clearly 8GB would be enough however when I play Planetside 2 my memory consumption reaches to 10-11GB at times. Windows at default will pretty much consume 1/2 of your memory until you reach about 8GB this means at least 4GB will be available for everything else. There are some games where the system requirements are 6-8GB of ram and once you consider the amount of ram windows uses just at default it becomes clear. You may have 1 car for your 3 car garage but what if you want to park your car diagonally or you buy a second car? It's better to have more than not enough in most cases and I'll give you some prime examples. True you may not utilize the extra memory but at some point you may.
